Homemade cream cheese for cakes


Ingredients
  • 4 cups (32oz /1000ml) whole milk (full fat, not low fat)
  • 2-3 tablespoons lemon juice (lime juice or white vinegar)
  • 1 teaspoon salt
Instructions
  1. In a heavy bottomed saucepan, heat themilk on med-high. Stirring constantly until it starts to a rolling simmer.
  2. Reduce the heat to medium. Add the lemon juice 1 tablespoon at a time, in 1 minute intervals. Continue stirring constantly.
  3. Continue cooking until the mixture curdles. Stir constantly till the mixture has separated completely, this should take just a few minutes. There will be a green liquid on the bottom and thick curdles on top. Remove from the heat. This should happens within a few minutes.
  4. Lay a sieve with a cheesecloth over a large bowl. Pour the curd mix into the sieve. Let it strain and cool for about 15 minutes.
  5. Transfer curds to a food processor and process until curds have come together and are totally smooth and creamy. It will take around 3-4 minutes. Keep going if your cream cheese is grainy.
  6. Add salt and taste. Add more if you want more flavor. Now is also a good time to add herbs, garlic or any other flavors you like.
  7. This cream cheese must be stored in the fridge. I always use it within 7 day but can last as long as up to 2 weeks.

Ingredients

Condensed milk -400 GMs
Milk 4 tsp
Butter 1 tsp
Sugar for garnish

Method

In a microwave safe glass bowl pour the condensed milk,on high (900) cook for 10 minutes in 2 minutes interval,after 8 minutes cooking add milk to it then microwave for another two minutes, then cool down the mix to room temperature ,put some butter to your plan roll the mix into ball shape then roll the ball into sugar,chill the balls for half an hour in refrigerator. Enjoy the melting tempting yum yum dessert balls.

Homemade chocolate



Ingredients
Cooking milk chocolate 200gms
Cooking dark chocolate 200 gms
water for boilng

One silicone chocolate mould
Method:
Chop the both cooking chocolates,place them in a glass bowl.
In a deep sauce pan boil water ,put the glass bowl on the up side of sauce pan..stir the chopped chocolate until completely melts.in a silicone mould pour the chocolate mix and chill for 10 minutes in refrigerator. Remove chocolates  from mould in to a plate
Enjoy the homemade chocolate.

Prawn's Manchuria

Ingredients
Prawns 1 kg
Salt to taste
Chilli powder 1 tsp
Ginger garlic paste 2 tsp
Coriander powder 1 tsp
Garam masala 1/4 tsp
Turmeric powder 1/2 tsp
Oil for deep fry
Soya sauce 1 tsp
Vinegar 1/4 tsp
Green onion 3 tsp
Coriander leafs 1/2 cup
Garlic cloves 3-4
Tomato sauce 3 tsp
Water to boil prawn's

Method
First clean the prawns,then boil the prawns add salt and turmeric powder.after five minutes boil strain the water keep it the prawn's in a deep bowl,add salt,chilli powder,coriander powder,garam masala,
Ginger garlic paste .deep fry the prawns until light golden brown,then in a pan add two spoons oil,then add chopped garlic cloves,green onions,soya sauce ,vinegar, salt,then add prawns fry in to it...on medium flame cook the mix for 5 minutes,after that add tomato sauce on high flame stir the mix until totally absorbs the water content in it.then add two spoons lemon juice to it.garnish with coriander leafs.serve hot with tomato ketchup.enjoy


Tomato sauce hot and sweet



Ingredients
Fresh red tomatoes 1 kg
Salt 1 tsp
Sugar 1/2 cup
Chilli powder 1/2 tsp
Vinegar- 1 tsp

Method
Clean the tomatoes and steam it on medium flame for half an hour. after that tomatoes let's cool down to room temperature .grind until become smooth paste. Filter the juice of tomatoes with out seeds and lumps. then in a deep pan put tomato juice and add salt ,chilli powder,sugar on medium flame for about 5-10 minutes,no water to be added,after seeing bubbles on it switch of the flame and add vinegar.after cool down put it in the glass jar,or bottle tightly closeed lid.it will be used for up to six months with or with out refrigeration. Enjoy the hot and sweet tomatoe sauce with snacks,fried rice,noodles etc.

Apple dessert

Ingredients
One Apple
Butter 2 tsp
Bread toast 3 no
Brown sugar 5 tsp
Cinnamon powder 1/4 tsp
Chilli powder 1/8 tsp
Salt a pinch
Any caramel chocolate ( I like melody chocolates)- a bowl full
Lemon
Hershy's Chocolate syrup for garnish

Method
Peel the apple and cut in to medium size cubes ,
Crush the bread toast into powder with mixer.
In a non stick pan put 2 tsp of butter add brown sugar after sugar melted add Apple cubes in to it,cook the apple cubes for 5 minutes on medium flame,then add salt,chilli powder,cinnamon powder ,bread toast powder to it mix it on low flame,finally add unwrapped caramel chocolate s to it and switch of the flame.then squeeze a lemon juice to it and mix it.put it in the refrigerator to chill,garnish with chocolate syrup enjoy the ultimate taste of apple dessert.

Homemade Caramel chocolate ( kachha mango bite flavoured)



Ingredients
Condensed milk 1 can 400 GMs
Kachha mango bite chocolates 5 no's
Butter 2 tsp

Method
Microwave the condensed milk and unwrapped kachha mango bites for 10minutes @ 2 minutes interval time in a large glass bowl or microwave safe plastic bowl.every 2 minutes interval mix the condensed milk and kachha mango bite evenly.after 10 minutes the texture becomes thick like a paste.remove from oven and cool it to room temperature. After that in a bowl take butter apply it to fingers take the mixture in small portion and with help of fingers roll in to a oval shape .then take aluminum foil to wrap it.if u wish add some chapped  dry fruits in to mixture.enjoy the caramel bites.

Prawn's fry

Ingredients
Prawn's 1 kg
Corn flour 2 tsp
Turmeric powder 1/4 tsp
Ginger garlic paste 2 tsp
Chilli powder 1/2 tsp
Salt to taste
Coriander leafs 1/4 cup
Garam masala 1/4 tsp
Coriander powder 1/3 tsp
Lemon 1 medium size
Refined oil for deep fry
Water to boil prawn's

Method
Clean the prawn's then in a kadai add two cups of water and heat.at boiling stage add prawns in to water ,sprinkle 1/4 tsp of salt and 1/4 tsp of turmeric powder.after 5 minutes strain the water ,take the boiled prawns in to a bowl,then add corn flour,salt ,chilli powder,ginger garlic paste,garam masala,coriander powder and mix it gently.keep it a side.in kadai take refined oil for deep frying on medium flame.once oil gets hot fry the prawns until it turns slightly into golden colour take into a bowl.after frying all the prawns squeeze a lemon in to it ,add some coriander leafs,and coriander powder to it and mix it up.serve hot.enjoy crunchy prawn's fry

Crispy cauliflower fry


Ingredients
Boiled Cauliflower into big pieces- 1 big
Corn flour 1/4 cup
Ginger garlic paste -2 tsp
Coriander powder - 2 tsp
Garam masala -1/4 tsp
Turmeric powder-1/4 tsp
Till seeds 2 tsp
Dry coconut grated 2 tsp
Chilli powder -1/2 tsp
Salt - to taste
Lemon 1 medium size
Coriander leafs 1 bunch
Refined oil - for deep fry

Method
In a bowl add boiled cauliflower, garam masala,salt,chilli powder, coriander powder,turmeric powder, ginger garlic paste,till seeds,dry coconut grated ,corn flour mix smoothly with hand .put the mix in refrigerator for one hour.
On kadai take oil for deep frying on medium flame,once oil heated slowly dip the cauliflower mix one by one fry until it turns in to golden brown on medium flame.after deep frying,squeeze a medium size lemon in to fried cauliflower mix add some coriander leafs and coriander powder to garnish.serve hot with rice or roti.enjoy the crispy cauliflower  fry
