home made tutti fruitti



ingredients

raw papaya -400 gm
sugar 400 gms
vanilla essence 1/2 tsp
edible food colours - red,orange,yellow,green(optional)
water as needed

method

chop raw papaya and remove the seeds along with the white part.peel of the skin of papaya  
boil 4-6 cups of water in a sauce pan.once it starts boiling,add chopped raw papaya and let it cook for 3 minutes.
remove from the heat and let the papaya remain in  the same water for another 5  minutes.
meanwhile,cook 400 gms of sugar and 3-4 cups of water in a pan,once sugar is diluted completely in water add papaya pieces in to it.then add 1/2 tsp of vanilla essence to it.
after cooking it on medium flame for about 15-20 minutes.the sugar syrup is getting thick and form one string consistency.at that consistency switch off the flame..let it cool down for 10 minutes.
add a pinch of 3 different colors in a bowls and filled with papaya sugar syrup.mix well and keep it aside for 12-24 hours.

after that take out the papaya cubes from sugar syrup and strain them properly.
spread those papaya cubes over a wire net placed on the top of a plate.


let them dry till the stickiness is totally absorbed.after two days the dried tutti fruitti cut in to small cubes ,dried for another 4-5 hours.then in a air tight container place the dried tutti fruitti add 3-4 drops of cooking oil close the lid add shake it for 2 minutes(preservative) ,then kept in fridge.it will be use up to 3-4 months
store the tutti frutti in an airtight container and use whenever needed.

tomato rasam

ingredients

tomatoes -5 (medium size)
onion -1 big size
garlic cloves- 2-3 
coriander powder- 3 tsp
rasam powder -1 tsp
cumin seeds- 1/2 tsp
chillies-2 no
tamarind juice extract-2 tsp
salt to taste

for seasoning

oil -2 tsp
turmeric powder -1/4 tsp
cumin seeds-1/2 tsp
mustard seeds-1/4 tsp
dry red chilli -2 no
curry leafs- 5-6

for garnishing 

coriander leafs- 1 cup

method

take the ingredients and neatly cut in to big pieces and boil it in water for 15 minutes.


after that take out the ingredients and grind in to a smooth paste

take a deep kadai and oil ,heat the oil add seasoning ingredients and then add the grinded paste to it.


add after 3-5 minutes add boiled water(the ingredients boiled water) then add some extra water(total water 5-6 no  rice cups quantity) boil for 10 minutes.

finally garnish with coriander leafs and switch of the flame..serve with rice..

badaam katli







ingredients

badaam nuts(almonds)  -1/4 kg
milk-1 cup
sugar powder- 1 1/2 cup
cardamom powder -1/4 tsp
ghee(clarified butter) - 1/4 cup

method

take 3 cups of water in a bowl and boil for 5 minutes,add badaam(almonds) to it and boil another 5 minutes.
in another bowl take 2 cup of normal water and transfer almonds into it and peel the outer layer of almonds easily.
then soak the almonds in water for an hour.
after soaking almonds,take it out and add little bit amount of milk (1/4 cup) and grind it to smooth paste.
in a kadai add 5 tsp of ghee(clarified butter) add the milk then add almond paste and mix it well on a medium flame.
after milk is completely absorb the almond mix add sugar powder and cardamom powder and mix thoroughly with out forming lumps.
after adding sugar powder the mix turns little bit thin .continuously turning it with a wooden spatula until it becomes thick and get one mass.
add extra ghee of it sticks to kadai .
after getting thick mix i.e it will looks like does not stick to kadai and getting on mass consistency.turn of the flame.and cool it down for half an hour.
after the take a butter paper of two rectangular shaped long butter sheets place it in a rectangular baking tray
at the middle of two butter sheets place the badaam katli mix and press with a chapati roller with minimum 1/2 inch thickness of katli above butter sheet.after that place the tray in a freezer for half an hour.
after half an hour take out the tray and remove the upper butter sheet and cut the badaam katli in to your favorite shapes.the gently remove the katli in to a box.if u wish add silver foil to it. enjoy the katli with your family....

instant kalakand burfi


ingredients

homemade paneer -4 cups
sugar -1 cup
milk powder -1/2 cup
milk- 1/4 cup
butter( or ) ghee(clarified butter) - 4 tsp
cardamom powder -1/2 tsp

method

on the medium flame stove in a kadai add clarified butter.then add milk after heating milk add paneer to it press it to absorb the milk to paneer.(5-6 minutes)
after absorbing all milk to paneer add milk powder and sugar mix it with out any dry powder of milk....for 3-4 minutues
take a deep square baking dish add butter on the surface of the dish apply all over the dish...transfer the burfi mix into dish set it for half an hour
take a knife apply few quantity of butter to knife then cut the burfi into square shape .and enjoy the instant kalakand burfi.

bendi fry



ingredients

bendi(okra) -1/2 kg
cumin powder-2 tsp
coriander powder -3 tsp
chilli powder-2 tsp
salt -to taste
turmeric powder-1/2 tsp
corn flour 1/2 cup
red (or) orange food colour-2 drops


oil fro deep fry

for seasoning
 cumin seeds -1 tsp
mustard seeds 1/2 tsp
curry leafs -4-8 leafs

method

**take bendi cut into medium size pieces and place it in a freezer for 10 minutes.(basic tip)
after 10 minutes take out the bendi and add chilli powder,salt,turmeric powder,cumin powder,coriander powder,corn flour,red food colour. 
Magnate the mix for another 10 minutes
in a kadai add 3 cups of oil for deep fry.
after heat the oil make flame in a sim flame add bendi pieces to oil for 10 minutes deep fry
after that increase the flame in to high and fry for 2 minutes then take it out in to a bowl
after Perfect fry the bendies will reduce its weight.
after total bendies frying..take a small kadai and add 2 tsp of oil add cumin,mustard seeds and curry leafs.
add that in to bendi fry and mix it..enjoy with rice
